BBQ Rutabaga Chips


One thing I will note here is that rutabagas can be tricky to slice.  I recommend using a mandolin or vegetable peeler to get thin, consistent slices. Go slow and be careful if you’re using a mandolin. I don’t want any sliced fingers! Use the blade guard and the gloves!

Ingredients

Ingredients - Chips

  • ¼- ½ cup neutral tasting oil (like Avocado Oil or Refined Coconut Oil)
  • 1 large rutabaga 
  • 2 tsp kosher salt 

Ingredients - BBQ Seasoning

  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1 tsp Cinnamon
  • 1 tsp Chilli Powder
  • ½  tsp Ground Mustard
  • ½ tsp Smoked Paprika
  • ½ tsp Cayenne Pepper (optional)

How to Prepare

  1. Pour oil into a large skillet. Ensure there is about 1-2 inches of oil in the skillet. Heat over med-high to high heat.  
  2. While the oil is pre-heating, slice the rutabaga with a mandolin on the thinnest setting, about ⅛ cm. 
  3. Place the sliced rutabaga in a colander. and add 2 teaspoons of salt. Toss the rutabaga with the salt until everything is coated and allow to rest for 5 mins. The salt will draw out the water in the rutabega and allow it to crisp up better when fried. 
  4. Next, lay some paper towels on a cookie sheet. Working in batches, spread the rutabaga slices out on paper towels and press out any excess water.  
  5. Chop drained rutabaga into quarters and place in a medium sized bowl. 
  6. Blend together all of your BBQ seasoning ingredients until well combined and then add the BBQ seasoning to the rutabega. Toss to coat evenly. You may not need to use all of the BBQ seasoning.
  7. Now that the oil is hot, while working in batches, add the rutabega to the skillet. Fry for 3 mins a side and then flip and fry for another 3 minutes. The rutabega should curl at the edges and turn golden brown.  
  8. Remove from skillet onto paper towel lined cookie sheet or baking rack to dry. The chips will begin to crisp as they cool. 
  9. Add extra BBQ seasoning to taste and enjoy!
